Lemon Bar

Ingredients

for crust
SAVA flour 70 g
confectioner’s sugar 30 g
salt 1/4 tsp
lemon zest 1/2 pcs
unsalted butter 63 g
bake 170c 15 mins

for filling
SAVA flour 40 g
egg 2 pcs
granulated sugar 100 g
baking powder 1/8 tsp
lemon juice 1/4 cup


Instructions:
1.     Preheat the oven to 180c

2.     In a large bowl: Combine SAVA flour , confectioner’s sugar ,salt ,lemon zest and whisk
        to combine, breaking up any clumps of lemon zest.

3.     Add the butter and mix until well-combined.

4.     Press the mixture into the bottom of prepared pan.

5.     Bake for about 15 minutes or until firm.Remove from the oven and allow to cool
        briefly.
6.     In a medium-sized bowl:place the egg,granulate sugar, baking powder, lemon juice
        and SAVA flour ,whisking vigorously to combine after each addition.

7.     Pour the custard mixture into the baked crust and return the pan to oven and bake
        until custard set about 20-25 minutes. Remove from the oven and allow to
        coolcompletely. Serve chilled
